Brown Butter- Chocolate Chunk Cookies

3/4 cup of unsalted butter

1/2 cup of sugar

1/2 cup of brown sugar

1 large egg

1 1/2 tsp. salt

2 tsp. vanilla extract

1 cup of all-purpose flour

1/2 tsp. baking soda

1 bag of semi-sweet chocolate chunks


  1. Brown the Butter: in a sauté pan, melt 4 tbsp. of the butter. Wait for the butter to smell nutty and turn a light brown (2-3 minutes). Cool for 10-30 minutes.

  2. Make Dough: cream the remaining 8 tbsp. of butter with both sugars in a stand mixer until fluffy. Add egg, salt, and vanilla and beat until blended. Sift in flour and baking soda and stir in cooled brown butter. Don't overmix! Stir in chocolate chunks!

  3. Scoop onto 2 cookie sheets and bake at 350*F for 8-10 minutes! Let cool and enjoy!


I first made this recipe on January 31st, 2022. It is now April 15th of the same year. It is safe to say that it has been a busy semester. Now that the semester is over, I have no travel planned, and I am living in my own house again, I am back and ready to share some more recipes with you all!

It might be a depressing way to restart, but this recipe was an EPIC FAIL. It turned out so bad the first time that I tried it again, and they were still bad. Don't get me wrong, they were delicious! They were just pancakes. They were flat and greasy and just very runny. They tasted similarly to the brown butter blondies, but they were much less enjoyable to eat. The second time, I made sure to mix them less and to ensure the texture of the batter was thicker so that they might be tempted to stay together. They defied me. If anyone can figure out the trick to this recipe, please let me know!! God love Alex, he took them all home and ate them all regardless.

More yums to come friends! And they will come much faster and much more consistently now that I am a free woman! A woman that is one degree hotter I might add:)
